There are lots of plans for these, but owning a house in the world that is yours and yours alone is pretty cool. Plus we have lots and lots of furniture (not all of which you've seen) so you can decorate it to match your personality. Plus it offers additional storage within itself and via chests. Houses are certainly something that not everyone will be interested in, but that's true of everything in the game.
